Nice Cream Parfait with Brown Butter Caramel and Kiwi Lime Salsa

I wanted to turn the banana bread I had recently baked into a dessert so I created this delicious banana nice cream parfait.

Nice cream is a puree of frozen banana, sometimes mixed with other fruits or chocolate, to become a vegan option for ice cream.

I love the texture of the frozen bananas once puréed and then smothered in brown butter caramel sauce. The kiwi and lime add some acidity to the dish giving balance to the sweetness of the banana and caramel. Happy cooking.

Try making fruit-flavored nice cream with frozen mango, strawberries, or blueberries puréed with the banana.

Yield: 3–4 servings

Preparation time: 1 hour

Cook time: 15 minutes


Nice Cream

4 bananas

2 tsp vanilla paste


Kiwi Lime Salsa

2 fresh kiwi

½ tsp lime zest

1 tsp lime juice


Brown Butter Caramel Sauce

¼ cup salted butter

90 ml heavy cream

¾ cup brown sugar

Pinch of salt


½ loaf of Banana bread

1 fresh banana for garnish


For the nice cream

  • Cut the bananas into pieces and place them on a tray lined with plastic wrap.

  • Cover and place the tray in the freezer.

  • Once the banana is frozen put it into the food processor with the vanilla paste and blend until smooth.

  • Put the nice cream into a sealed container and back into the freezer while you prepare the rest of the recipe.

For the kiwi salsa

  • Peel the kiwi and cut it into small dice.

  • Combine the kiwi with the lime zest and juice in a small mixing bowl. Set aside.

For the caramel sauce

  • Put the butter into a small saucepot on high heat.

  • Once the butter starts to brown add the heavy cream and whisk.

  • Whisk in the sugar and salt, bring the mixture to a boil, and turn off the heat.

  • Pour the sauce into a container and set aside.

Finishing the plate

  • Cut the banana bread into small cubes and place them into a mixing bowl.

  • Pour some of the caramel sauce over the banana and mix to coat lightly.

  • Add a spoonful of banana bread to the bottom of the serving dish.

  • Add a spoonful of kiwi salsa, a scoop of nice cream, a drizzle of caramel, and a slice of fresh banana for garnish. Enjoy!
